Just made these Awesome chocolate cupcakes for my son to take to the childminders for him and his friends to share! They are dairy free and soya free!
50g Cocoa powder
175ml boiling water
3 Medium eggs
1 tsp Vanilla extract
175g plain flour
1/2 tsp salt
1/2 tsp bicarbonate soda
225g caster sugar
175g dairy free sunflower spread
For the frosting..
175g icing sugar
75g sunflower spread
1 tsp vanilla extract
1. Preheat your oven to 180C/160C fan/gas mark 4. Line your muffin tins with 16 paper muffin cases. Whisk together the boiling water with the cocoa powder in a medium sized bowl until smooth. Allow the mixture to cool until it reaches room temperature (put it in the freezer to speed this up) then whisk in the eggs and vanilla.
2. In another bowl mix the flour, salt, bicarbonate soda, sugar and then add to the cocoa mix. Keep whisking and add in the butter, whisk until all the ingredients are smooth. Fill the muffin cases three quarters full and bake in the oven for 20 mins. Remove from the oven and let cool.
3. For the frosting I followed the recipe on the box of the icing sugar which was sift 175g of icing sugar into a bowl and mix with 75g butter - I used sunflower spread to keep it dairy and soya free! Add 1 tsp of vanilla extract and mix. I placed the mix in my fridge until the cupcakes were cool enough for the frosting.
4. Place required amount of frosting on cupcakes and decorate as you wish - I used Christmas cake toppers from sainsburys..
These cakes were delicious and so easy to make, it took me around 20 mins to prep them.
